2022 Illahe Pinot Noir “Bon Sauvage” tasting 2/26 roast lambBon Sauvage is a reference to the transition to using native yeast in 2015. Illahe is constantly attempting to be lower intervention in their winemaking, from using native yeasts, to using bicycles to power pumps in the winery to bypass electricity. Spicy, earthy, a touch of smoke and more structured than the cuve Miette, this lands with more intensity but is surprisingly graceful, stunning pairing with Northwest classic Cedar Planked Salmon.
