In 2021, Dave & Koen focused solely on Red Smillon a rarity in its own right and ran wild with three distinct fermentations: stainless steel, ceramic egg, and an extended 210 day skin maceration. The result is a wine with unexpected depth, a textured mid palate, and a bit of rebellious charm. As the team
