Frdric Simon and Catherine Blanger have farmed their vineyards sustainably since 2011, working across sites near Lake Memphremagog in the Eastern Townships and along the St. Lawrence River in Lanaudire. Vineyard work is done by hand, fermentations begin spontaneously, and the wines are bottled without
